Clean the Mushrooms

Rinse the mushrooms under cold water gently to remove dirt. Pat them dry with a paper towel.

Chop the Vegetables

Slice the red and green bell peppers into thin strips. Dice the onion and mince the garlic cloves.

Marinade

Mix the Marinade

In a large bowl, whisk together the olive oil, lime juice, cumin powder, paprika, oregano, salt, and black pepper until well combined.

Add Vegetables

Add the cleaned mushrooms, sliced bell peppers, diced onion, and minced garlic to the marinade. Toss everything gently to coat well.

Cover the bowl with plastic wrap and let the vegetables marinate for at least 30 minutes at room temperature, or up to 2 hours in the refrigerator.
