Cook the Rice
In a medium saucepan, bring 2 cups of water to a boil. Add 1 cup of long grain rice, reduce heat to low, cover, and simmer for 15-20 minutes or until rice is tender and water is absorbed. Remove from heat and let sit covered for 5 minutes.

Cook the Chicken
While the rice is cooking, heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Season the chicken breasts with 2 tablespoons of chipotle seasoning. Once the oil is hot, add the chicken to the skillet. Cook for about 6-7 minutes on each side or until the internal temperature reaches 165°F (75°C). Remove from skillet and let rest before slicing.

Prepare the Black Beans
In a small saucepan, drain and rinse the can of black beans. Add the black beans to the saucepan along with 1 teaspoon of cumin and salt to taste. Heat over medium until warmed through, about 5 minutes.

Assemble the Bowl
In a serving bowl, start with a base of cooked rice. Top with sliced chipotle chicken, warmed black beans, and avocado. Garnish with fresh cilantro and serve with lime wedges on the side.
