Prepare the Pork
Trim excess fat from the pork shoulder and cut it into large chunks.

Season the Pork
In a mixing bowl, combine cumin, oregano, salt, and black pepper. Rub this spice mixture all over the pork chunks.

Cook the Pork
Place the seasoned pork in a slow cooker. Add the onion cut into quarters, crushed garlic, orange juice, lime juice, and bay leaves. Cover and cook on low for 8 hours or until the pork is tender and easily shredded.

Shred the Pork
Once the pork is cooked, remove it from the slow cooker and shred it using two forks.

For added texture, spread the shredded pork on a baking sheet and broil in the oven for 5-7 minutes until crispy.

Warm the corn tortillas in a skillet over medium heat for about 30 seconds on each side until pliable.

Serve the shredded pork on a platter with warm tortillas, cilantro, lime wedges, pickled red onions, and salsa on the side.
