Method

Preparation of Burbujeitas

  1. 1

    Mix Dry Ingredients

In a large mixing bowl, combine the all-purpose flour, baking powder, salt, and sugar. Whisk together until evenly blended.

  2. 2

    Combine Wet Ingredients

In a separate bowl, beat the eggs and then add the milk, vanilla extract, and melted butter. Mix well until combined.

  3. 3

    Combine Mixtures

Pour the wet ingredients into the dry ingredients, and mix until just combined. Do not overmix; a few lumps are okay.

  4. 4

    Heat the Oil

In a deep frying pan, heat the oil over medium heat until it reaches 350°F (175°C). You can test the oil by dropping a small amount of the batter into it; it should sizzle immediately.

  5. 5

    Fry the Burbujeitas

Using a spoon or small ice cream scoop, drop spoonfuls of the batter into the hot oil. Fry until golden brown on both sides, about 2-3 minutes per side.

  6. 6

    Drain and Cool

Once cooked, remove the burbujeitas from the oil and place them on a paper towel-lined plate to drain excess oil.

Serving

  1. 7

    Prepare Toppings

In a small bowl, mix the powdered sugar and cinnamon together. You can also prepare chocolate sauce and cut fresh fruit if desired.

  2. 8

    Serve

Dust the warm burbujeitas with the powdered sugar and cinnamon mixture. Serve immediately with chocolate sauce and fresh fruit on the side.
