Main Ingredients

Method

Preparation of Tartare

  1. 1

    Prepare the Beef

Finely chop the beef tenderloin using a sharp knife until it is in very small pieces. Avoid using a food processor as it can change the texture.

  2. 2

    Combine Ingredients

In a mixing bowl, combine the chopped beef, egg yolk, capers, Dijon mustard, Worcestershire sauce, shallot, parsley, olive oil, salt, and black pepper. Mix gently until all ingredients are well incorporated.

  3. 3

    Taste and Adjust

Taste the mixture and adjust seasoning with more salt and black pepper as needed.

Serving the Tartare

  1. 4

    Plate the Tartare

Using a round mold or ring, pack the tartare mixture into the mold on a serving plate.

  2. 5

    Garnish

Top the tartare with microgreens or arugula for a fresh touch.

  3. 6

    Serve with Baguette

Arrange toasted baguette slices around the tartare on the plate for serving.
