Prepare the Potatoes
Wash the Russet potatoes thoroughly under cold water to remove any dirt. Cut each potato into thin strips (approximately 1/4 inch thick) to create fries.

Soak the Potatoes
Place the cut fries in a large bowl of cold water and let them soak for at least 30 minutes. This helps remove excess starch and makes the fries crispier.

Heat the Oil
In a large, heavy-bottomed pot or deep fryer, fill it with vegetable oil and heat it over medium-high heat until it reaches 350°F (175°C). Use a thermometer for accurate temperature.

Drain and Dry the Fries
After soaking, drain the fries and pat them dry with paper towels to remove excess moisture. This step is crucial to achieve crispy fries.

Fry the Potatoes
Carefully add a batch of fries to the hot oil, making sure not to overcrowd the pot. Fry them for about 4-5 minutes or until they are golden brown and crispy. Remove them with a slotted spoon and place them on a plate lined with paper towels to absorb excess oil.

While the fries are still hot, sprinkle them with Cajun seasoning and salt to taste. Toss gently to ensure even coating.
