    Wash the Potatoes

    Thoroughly wash the potatoes under cold running water to remove any dirt or debris. Scrub them gently with a brush if necessary.

    Peel the Potatoes (Optional)

    If desired, peel the potatoes using a vegetable peeler. Leaving the skin on adds a rustic touch and extra nutrients.

    Cut the Potatoes

    Cut the potatoes into even-sized chunks or slices, about 1-2 inches thick for uniform cooking.

Cooking

    Boil the Potatoes

    Place the cut potatoes in a large pot and cover with cold water. Add 1 tsp of salt to the water. Bring to a boil over medium-high heat, then reduce to a simmer and cook for about 15-20 minutes or until the potatoes are fork-tender.

    Drain the Potatoes

    Once cooked, drain the potatoes in a colander and let them sit for a minute to allow excess moisture to evaporate.

    Season the Potatoes

    In the same pot, add the drained potatoes back in. Drizzle with olive oil and add butter. Sprinkle with black pepper and any additional seasonings or herbs as desired. Toss gently to combine.

    Transfer the seasoned potatoes to a serving dish. Garnish with chopped chives if using. Serve hot and enjoy!
