Boiling Seafood

Prepare the Pot
In a large pot, combine 4 liters of water, 2 tablespoons of salt, and 4 tablespoons of Old Bay seasoning. Bring the mixture to a boil over high heat.

Add Seafood
Once the water reaches a rolling boil, add the sliced Andouille sausage, followed by the large shrimp, blue crabs, mussels, and clams. Stir gently to ensure even cooking.

Add Aromatics
Add the smashed garlic cloves, sliced lemon, and bay leaves to the pot. Allow the mixture to return to a boil.

Cook the Seafood
Reduce the heat to medium-high and let the seafood cook for about 5-7 minutes, or until the shrimp turn pink and the shells of the crabs open.

Drain and Serve
Turn off the heat, and carefully drain the seafood using a colander. Serve immediately on a large platter.

Mix the Sauce
In a medium bowl, combine 1 cup of mayonnaise, 1 cup of ketchup, 2 tablespoons of hot sauce, and 2 tablespoons of lemon juice. Stir until well mixed.

Serve the dipping sauce alongside the boiled seafood for a delicious complement.
