Method

Preparation

  1. 1

    Preheat the Oven

Preheat your oven to 200°C (400°F). Grease four ramekins with butter and lightly dust them with flour. Tap out any excess flour.

  2. 2

    Melt Chocolate and Butter

In a heatproof bowl, combine the dark chocolate and unsalted butter. Place the bowl over a pot of simmering water (double boiler) and stir until melted and smooth. Remove from heat and let cool slightly.

Mixing Ingredients

  1. 3

    Combine Sugar and Eggs

In a separate bowl, whisk together the granulated sugar, large eggs, egg yolk, and vanilla extract until well combined and slightly frothy.

  2. 4

    Mix Chocolate Mixture

Gradually add the melted chocolate and butter mixture into the egg mixture, whisking continuously until smooth.

  3. 5

    Add Flour and Salt

Sift the all-purpose flour and add it to the mixture along with a pinch of salt. Gently fold together until just combined, being careful not to overmix.

Baking

  1. 6

    Fill Ramekins

Divide the batter evenly among the prepared ramekins, filling each about 3/4 full.

  2. 7

    Bake the Cakes

Bake in the preheated oven for 12-14 minutes, or until the edges are set but the center is still soft.

  3. 8

    Cool and Serve

Remove the ramekins from the oven and let them cool for 1 minute. Carefully run a knife around the edges, then invert onto dessert plates. Dust with powdered sugar and serve immediately with a scoop of vanilla ice cream if desired.
