Directions

  1. 1

    Prepare the Manila Clams

Rinse the Manila clams under cold water to remove any sand or grit. Soak them in a bowl of fresh water for 20 minutes to help expel any remaining sand.

  2. 2

    Sauté Aromatics

In a large pot or deep skillet, heat the olive oil over medium heat. Add the minced garlic and diced shallots and sauté for 2-3 minutes until fragrant and translucent.

  3. 3

    Add Clams

Add the rinsed Manila clams to the pot and stir to combine with the sautéed garlic and shallots.

  4. 4

    Deglaze with Wine

Pour in the white wine and sprinkle with salt, black pepper, and red pepper flakes. Increase the heat to medium-high and cover the pot. Cook for 5-7 minutes until the clams open up.

  5. 5

    Finish with Parsley

Once the clams have opened, remove the pot from heat and stir in the chopped fresh parsley. Discard any clams that did not open.

  6. 6

    Serve

Serve the Manila clams hot, with lemon wedges on the side for squeezing over the clams.
