Preparation of Calamari

    Prepare the Calamari

    Rinse the cleaned squid under cold water and slice it into rings, about 1/2 inch thick. Pat them dry with paper towels to remove excess moisture.

    Set Up Breading Station

    In a shallow bowl, mix the all-purpose flour, cornstarch, salt, black pepper, paprika, and garlic powder. In another bowl, whisk together the eggs and milk until well combined.

Frying

    Heat the Oil

    In a large, deep skillet or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). Use a thermometer to check the temperature, as this is crucial for proper frying.

    Bread the Calamari

    Dip each calamari ring into the egg mixture, allowing excess to drip off, then coat it in the flour mixture. Shake off any excess flour.

    Fry the Calamari

    Carefully add the breaded calamari in batches to the hot oil. Avoid overcrowding the pan. Fry for about 2-3 minutes or until golden brown and crispy. Use a slotted spoon to remove the calamari and drain them on paper towels.

    Arrange the fried calamari on a serving platter. Serve hot with lemon wedges and marinara sauce for dipping.
