    Clean the Crawfish

    Rinse the crawfish under cold water to remove any dirt or debris. Discard any dead crawfish.

    Prepare Vegetables

    Peel and quarter the potatoes. Cut the corn into halves if they are large. Chop the onion and celery into large pieces.

Cooking

    Boil the Water

    In a large pot, bring 5 quarts of water to a boil over high heat. Add 1 cup of salt and stir until dissolved.

    Add Spices

    Once the water is boiling, add the cayenne pepper, Old Bay seasoning, black pepper, and bay leaves. Stir well to combine.

    Add Vegetables

    Add the potatoes, corn, onion, and celery to the boiling water. Cook for about 10 minutes until the potatoes are tender.

    Add Crawfish

    Add the cleaned crawfish, sliced lemons, and crushed garlic cloves to the pot. Stir well and return to a boil.

    Finish Cooking

    Once the water returns to a boil, cook for an additional 3-5 minutes or until the crawfish turn bright red and are cooked through.

    Drain and Serve

    Turn off the heat and carefully drain the pot using a colander. Serve the crawfish and vegetables on a platter, optionally garnished with extra lemon wedges.
