Method

Preparation

  1. 1

    Clean the Clams

Place the fresh clams in a bowl of cold water with a bit of salt for about 30 minutes. This helps to remove any sand or grit.

  2. 2

    Prepare the Vegetables

While the clams are soaking, wash and chop the potatoes into quarters and cut the corn into halves if desired.

  3. 3

    Slice the Sausage

Cut the andouille sausage into bite-sized pieces.

  4. 4

    Mince the Garlic

Peel and finely mince the garlic cloves.

  5. 5

    Prepare the Lemon

Cut the lemon in half and set aside for the boil.

Cooking

  1. 6

    Boil the Water

In a large pot, bring 4 quarts of water to a boil. Add the salt, Old Bay seasoning, bay leaves, and red pepper flakes.

  2. 7

    Cook the Potatoes

Once the water is boiling, add the quartered potatoes and cook for about 10 minutes.

  3. 8

    Add the Sausage and Corn

After 10 minutes, add the sliced andouille sausage and corn. Cook for an additional 5 minutes.

  4. 9

    Add the Clams

Carefully add the cleaned clams and minced garlic to the pot. Stir gently to combine and cover the pot.

  5. 10

    Steam the Clams

Allow the clams to steam for about 5-7 minutes or until they open up. Discard any clams that do not open.

  6. 11

    Serve

Remove the pot from heat, squeeze the lemon halves over the boil, and stir gently. Serve hot, garnished with fresh parsley and lemon wedges.
