Method

Preparation

  1. 1

    Clean the Clams

Rinse the fresh clams under cold running water to remove any sand or debris. Discard any clams that are open and do not close when tapped.

  2. 2

    Chop Ingredients

Finely chop the garlic and parsley. Cut the lemon into wedges for serving.

Cooking

  1. 3

    Heat Olive Oil

In a large pot or skillet, heat 2 tablespoons of olive oil over medium heat.

  2. 4

    Sauté Garlic

Add the minced garlic to the pot and sauté for about 1-2 minutes until fragrant, being careful not to burn it.

  3. 5

    Add Clams and Wine

Add the cleaned clams to the pot, followed by 1 cup of white wine. Stir to combine.

  4. 6

    Season and Cover

Add 1 teaspoon of salt and 1 teaspoon of black pepper (and red pepper flakes if desired). Cover the pot and let the clams steam for 5-7 minutes or until they have opened.

  5. 7

    Add Butter and Parsley

Once the clams have opened, add 2 tablespoons of butter and the chopped parsley. Stir gently to combine and allow the butter to melt.

  6. 8

    Serve

Remove the pot from heat. Serve the clams hot with lemon wedges on the side.
