Potatoes

Method

Preparing the Potatoes

  1. 1

    Wash and Cut the Potatoes

Start by washing the russet potatoes thoroughly under running water to remove any dirt. Next, cut each potato into thin strips, about 1/4 inch thick, to create fries.

  2. 2

    Soak the Potatoes

Place the cut fries into a large bowl of cold water and let them soak for at least 30 minutes. This helps to remove excess starch, making the fries crispier.

Making the Cajun Seasoning

  1. 3

    Mix the Seasoning

In a small bowl, combine paprika, garlic powder, onion powder, cayenne pepper, dried thyme, dried oregano, salt, and black pepper. Stir until well mixed.

Frying the Fries

  1. 4

    Heat the Oil

In a large, deep pot or deep fryer, heat the vegetable oil to 350°F (175°C). Use a thermometer to ensure the oil reaches the correct temperature.

  2. 5

    Dry the Potatoes

After soaking, drain the fries and pat them dry with paper towels to remove excess moisture.

  3. 6

    Fry the Potatoes

Carefully add a handful of the dried fries into the hot oil, making sure not to overcrowd the pot. Fry for about 5-7 minutes or until golden brown and crispy. Remove them with a slotted spoon and drain on paper towels.

  4. 7

    Season the Fries

While the fries are still hot, sprinkle the Cajun seasoning mixture over them generously, tossing to coat evenly.
