Mashing
In a large pot, bring 8 cups of water to a boil. Add the Pilsner malt and rice, stirring to combine. Maintain the temperature around 150°F (65°C) and hold for 60 minutes to allow the starches to convert to sugars.

Boiling
Bring the wort to a boil again and add the Saaz hops. Boil for 60 minutes, adding lemon zest and coriander in the last 5 minutes.

Cooling
Cool the wort rapidly using a wort chiller or an ice bath until it reaches around 70°F (21°C).

Fermentation
Transfer the cooled wort to a sanitized fermentation vessel and add the lager yeast. Seal the vessel and allow it to ferment at a cool temperature for about 2 weeks.
