Prepare Sushi Rice

Rinse and Cook Rice

Rinse the sushi rice under cold water until the water runs clear. In a pot, combine the rinsed rice and water. Bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes or until the water is absorbed. Remove from heat and let it sit for 10 minutes.

Season Rice

In a small bowl, mix together rice vinegar, sugar, and salt until dissolved. Fold this mixture into the cooked rice gently, being careful not to mash the grains.

Prepare Prawn

Cook Prawns

In a skillet, heat olive oil over medium heat. Add minced garlic and sauté for 30 seconds. Add prawns, season with salt and pepper, and cook for about 3-4 minutes on each side until they turn pink and are cooked through.

Prepare Sablefish

Cook Sablefish

Marinate the sake kasu sablefish in soy sauce and mirin for about 15 minutes. Preheat the grill or broiler. Grill the sablefish for about 5-6 minutes on each side until nicely charred and cooked through.

Assemble the Dish

Plate the Dish

On a plate, place a serving of sushi rice risotto. Top with grilled prawns and pieces of sablefish. Garnish with uni on rice crackers and serve immediately.
