    Prepare the Collard Greens

    Wash the collard greens thoroughly under running water. Remove the tough stems and chop the leaves into bite-sized pieces.

    Sauté Aromatics

    In a large pot, heat the sesame oil over medium heat. Add the minced garlic and ginger, and sauté for about 2 minutes until fragrant.

    Add Sauces

    Stir in the fermented bean paste and oyster sauce. Cook for another minute, stirring to combine with the aromatics.

    Add Collard Greens

    Add the chopped collard greens to the pot, stirring to coat them with the sauce mixture.

    Add Broth and Simmer

    Pour in the vegetable broth, and season with salt and black pepper to taste. Bring to a simmer, cover, and cook for 30-35 minutes until the greens are tender.

    Serve

    Once the collard greens are tender, taste and adjust the seasoning if needed. Serve warm as a side dish.
