Make the slaw
In a medium bowl combine 1 cup finely shredded green cabbage and 2 tsp grated carrot. Add 2 tbsp mayonnaise, 1 tsp apple cider vinegar, 1 tsp sugar, 1 tsp salt, and 1/4 tsp black pepper. Toss thoroughly until evenly coated. Taste and adjust salt or sugar as needed. Cover and refrigerate for at least 10 minutes while you prepare the sausage so flavors meld and slaw chills slightly.

Grill or pan-cook the sausage
Preheat a grill to medium-high (or heat a heavy skillet over medium-high). Lightly oil the grill grate or skillet. Place 1 each 1/3-lb sausage link on the grill or skillet. Cook for 12–15 minutes, turning every 2–3 minutes so the casing browns evenly and the internal temperature reaches 160°F (71°C). If using direct grill, move to a slightly cooler zone the last few minutes to avoid burning while reaching safe doneness. Remove from heat and let rest 2–3 minutes.

Toast the roll and melt cheese
While the sausage rests, split the roll and spread 1 tsp butter (or brush with oil) on the cut sides. Place cut sides down on the grill or skillet for 1–2 minutes until lightly toasted and golden. Place 1 slice pepper jack cheese on the bottom half of the warm roll; return to the grill or skillet for 20–30 seconds or cover briefly to melt the cheese slightly.

Assemble sandwich
Place the cooked sausage on top of the melted cheese in the roll. Spoon approximately 2 tbsp BBQ sauce over the sausage (more to taste). Top the sausage with about 2 tbsp of the chilled coleslaw (drain excess liquid if necessary so it doesn't sog the roll). Sprinkle 2 tbsp finely chopped onion evenly over the slaw. Add the top half of the roll and press lightly.

Serve
Serve immediately while sausage and roll are warm so cheese remains melty and slaw provides a cool contrast. Provide extra BBQ sauce at the table if desired.
