Measure all ground spices and seasonings into a medium mixing bowl. Using measured ingredients prevents clumping and ensures consistent flavor.

If using citric acid or lemon zest for a bright note, ensure the zest is very finely grated and fully dried (or use citric acid powder) so the finished blend stores well.

Combine base spices
Add smoked paprika, sweet paprika, kosher salt, granulated garlic, onion powder, ground black pepper, white pepper, ground coriander, ground cumin, and ground mustard to the bowl. Stir with a whisk or spoon until the mixture is uniform in color and texture.

Add boosters
Stir in brown sugar, granulated cane sugar, celery salt, cayenne pepper, smoked chile, dried oregano, and dried thyme. Mix thoroughly so the sugars are evenly distributed and no clumps remain.

Taste a very small pinch (or rub between fingers) and adjust: add up to 1/2 tsp more salt if needed, more cayenne for heat, or an extra 1/2 tsp brown sugar if you prefer sweeter notes. If using citric acid, start with 1/4 tsp and add more sparingly — it brightens but can become sour.

Stir in 1 teaspoon cornstarch to help prevent clumping during storage. If you plan to use the rub on meats where you want it to stick, optionally mix the reserved neutral oil spray into the meat surface when applying the rub rather than adding oil to the dry mix.

Sift the blend through a fine-mesh sieve into a clean bowl to break up any remaining lumps and ensure smooth texture.

Transfer Gooba Dust® to an airtight container or spice jar and label with date. Store in a cool, dark place for up to 6 months; shake before each use to re-homogenize.

Yield: approximately 3/4 cup (about 90–100 g) of seasoning. Use 1–2 tablespoons per pound of protein for a noticeable but balanced seasoning.
