Roast the chickpeas
Preheat oven to 400°F (200°C). Pat the drained chickpeas dry with paper towels to remove excess moisture. Toss chickpeas with 2 tbs olive oil, smoked paprika, cumin, garlic powder, 1/2 tsp salt and 1/4 tsp black pepper on a rimmed baking sheet in a single layer. Roast for 20–25 minutes, shaking pan once halfway through, until chickpeas are slightly browned and have a firm exterior but still tender inside. Remove and let cool 5–10 minutes.

Roughly mash
Transfer the warm roasted chickpeas to a large bowl and use a potato masher or fork to roughly mash them — leave some pea-sized pieces for texture. Aim for a mixture that resembles flaked chicken in bite size and texture.

Make the dressing
In a medium bowl whisk together vegan mayonnaise, Greek yogurt, Dijon mustard, fresh lemon juice, apple cider vinegar, maple syrup (or honey), 1/4 tsp salt, 1/4 tsp black pepper and celery seeds (if using) until smooth and well combined. Taste and adjust acidity or sweetness — add another 1/2 tbs lemon juice or 1/2 tsp maple syrup if desired.

Assemble
Lightly toast bread or warm croissants. Spread butter or a little extra mayo on one side of each slice if desired. Place a lettuce leaf or a handful of baby spinach on the bottom slice, heap 1/3 cup to 1/2 cup of the Chick-less Tickler mixture per sandwich (about 6 servings total depending on portion), top with remaining bread slice.

Chill and finish (optional)
For best melding of flavors, cover and refrigerate the chickpea salad for 30–60 minutes before serving. Serve with lemon wedges for squeezing. Alternatively, spoon into lettuce cups for a lighter, low-carb option.
