Marinade & Dry Rub

    Make rub

    In a medium bowl combine smoked paprika, brown sugar, kosher salt, black pepper, garlic powder, onion powder and cayenne pepper. Stir to blend evenly.

    Add olive oil to the dry rub and mix until it forms a spreadable paste. This helps the rub cling to the wings and promotes browning.

    Pat the wings dry with paper towels. Place wings in a large bowl or a resealable plastic bag. Add the rub paste and toss thoroughly to coat each piece. Refrigerate for at least 30 minutes and up to overnight for deeper flavor (if refrigerating longer, cover or seal to avoid drying). Let refrigerated wings sit 15 minutes at room temperature before cooking.

Wings (cook)

    Oven method (Crispy baked)

    Preheat oven to 425°F (220°C). Line a rimmed baking sheet with foil and place a wire rack on top. Arrange wings on the rack in a single layer with a little space between pieces for air circulation.

    Bake wings for 25 minutes, then flip each wing and continue baking for another 15–20 minutes until skin is golden and crisp and an instant-read thermometer inserted into the thickest part reads 165°F (74°C). Total time about 40–45 minutes depending on size.

    Grill method (optional)

    Preheat grill to medium-high (about 400°F/204°C). Oil the grates lightly. Place wings on grill over direct heat and cook 10–12 minutes per side, turning occasionally, until charred in spots and internal temperature reaches 165°F (74°C).

    Air fryer method (optional)

    Preheat air fryer to 400°F (200°C). Arrange wings in a single layer (cook in batches if necessary). Air fry 20–25 minutes, shaking or turning halfway, until crisp and cooked through.

BBQ Sauce (glaze)

    While wings are nearing completion (about 10 minutes before done), prepare the glaze. In a small saucepan over medium-low heat combine BBQ sauce, apple cider vinegar, honey, Worcestershire sauce and hot sauce (if using). Stir gently to combine.

    Bring the mixture to a low simmer and cook 3–5 minutes, stirring, to meld flavors and slightly thicken. Taste and adjust sweetness or acidity as desired. If using, stir in butter off heat until melted for a silkier finish.

Finish & Serve

    When wings are cooked through and skin is crispy, transfer them to a large bowl. Pour about 3/4 of the warm BBQ glaze over the wings and toss gently until evenly coated. Reserve the remaining glaze for brushing or serving on the side.

    Arrange glazed wings on a platter. Sprinkle chopped parsley or sliced green onions over the top. Serve with lemon wedges and remaining glaze on the side for dipping.

    If you want extra sticky glaze, place coated wings back on the hot grill or in the oven/grill for 1–2 minutes per side, brushing with remaining glaze and watching carefully to avoid burning.
