Grill the chicken breast until fully cooked, about 6-7 minutes per side. Once cooked, let it rest for a few minutes, then chop it into small pieces.

Prepare the Chicken

Heat 1 tablespoon of olive oil in a skillet over medium heat. Place one tortilla in the skillet, sprinkle half of the cheese over the tortilla, then add half of the grilled chicken and another layer of cheese. Top with a second tortilla.

Assemble the Quesadilla

Cook for about 3-4 minutes on one side until golden brown. Carefully flip the quesadilla using a spatula and cook for another 3-4 minutes on the other side until the cheese is melted and the tortilla is golden.

Remove the quesadilla from the skillet and let it cool for a minute. Cut into wedges and serve hot with salsa and optional toppings.
