Eggplant Caponata

Prepare the Eggplant
Dice the eggplant into small cubes and sprinkle with salt. Let it sit for about 30 minutes to draw out moisture and bitterness. Rinse and pat dry.

Cook the Vegetables
In a large skillet, heat the olive oil over medium heat. Add the chopped onion and celery, sautéing until soft and translucent, about 5-7 minutes.

Add Garlic and Tomatoes
Stir in the minced garlic and cook for an additional minute. Add the diced tomatoes, capers, and chopped olives. Cook for another 5 minutes.

Add Eggplant and Seasonings
Add the prepared eggplant to the skillet along with red wine vinegar, brown sugar, salt, and black pepper. Stir to combine.

Simmer
Reduce heat to low and let simmer for about 20-25 minutes, stirring occasionally until the eggplant is tender.

Finish with Basil
Remove from heat and stir in chopped basil. Allow to cool before serving.
Stuffed Mushrooms

Preheat the Oven
Preheat your oven to 375°F (190°C).

Prepare the Mushrooms
Clean the mushrooms and remove the stems. Chop the stems finely and set aside.

Make the Filling
In a bowl, mix together the cream cheese, grated Parmesan cheese, garlic powder, chopped parsley, salt, black pepper, and chopped mushroom stems until well combined.

Stuff the Mushrooms
Spoon the filling into each mushroom cap, packing it in gently.

Bake the Mushrooms
Place the stuffed mushrooms on a baking sheet, drizzle with olive oil, and bake for 20-25 minutes until golden and bubbly.
Bacon Wrapped Dates

Preheat the Oven
Preheat your oven to 400°F (200°C).

Wrap the Dates
Wrap each pitted date with half a strip of bacon and secure with a toothpick if necessary.

Arrange and Season
Place the bacon-wrapped dates on a baking sheet lined with parchment paper. Drizzle with honey and sprinkle with black pepper.

Bake in the preheated oven for 20-25 minutes, or until the bacon is crispy and caramelized.
