Preparation
- 1
Cook the Pasta
Bring a large pot of salted water to a boil. Add the spaghetti and cook according to the package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta.
- 2
Cook the Pancetta
In a large skillet over medium heat, add the pancetta. Cook until crispy, about 5-7 minutes. Remove from heat and set aside.
Mixing the Sauce
- 3
Prepare the Egg Mixture
In a bowl, whisk together the eggs and grated Parmesan cheese. Add black pepper to taste and mix until well combined.
- 4
Combine Ingredients
Add the drained pasta to the skillet with pancetta. Pour the egg and cheese mixture over the hot pasta, and toss quickly to combine, allowing the heat from the pasta to cook the eggs and create a creamy sauce. If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached.

Garnish and Serve
