Bun Preparation

    Activate the Yeast

    In a small bowl, combine warm water, sugar, and yeast. Let it sit for about 5-10 minutes until it becomes frothy.

    Prepare the Dough

    In a large mixing bowl, combine all-purpose flour and salt. Make a well in the center and pour in the yeast mixture and olive oil. Mix until a dough forms.

    Knead the Dough

    Turn the dough out onto a floured surface and knead for about 8-10 minutes until smooth and elastic.

    First Rise

    Place the kneaded dough in a greased bowl, cover it with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

    Shape the Buns

    Once risen, punch the dough down and divide it into 4 equal portions. Shape each portion into a round bun and place them on a baking sheet lined with parchment paper.

    Second Rise

    Cover the buns with a cloth and let them rise again for about 30 minutes.

    Bake the Buns

    Preheat your oven to 375°F (190°C). Bake the buns for 15-20 minutes, or until golden brown. Allow to cool before slicing.

Assembling the Sandwich

    Slice the Tomato

    While the buns are cooling, slice the heirloom tomato into thick slices.

    Prepare the Cheese

    Slice the fresh mozzarella into thick rounds.

    Assemble the Sandwich

    On the bottom half of each bun, spread 1 tablespoon of pesto, layer with prosciutto, mozzarella slices, heirloom tomato slices, and arugula.

    Top the Sandwich

    Place the top half of the bun on each sandwich.

    Serve

    Serve immediately as-is or grill the assembled sandwich for a few minutes on each side until the cheese melts and the bun is toasted.
