Cook the Pasta
In a large pot, bring salted water to a boil. Add the rigatoni pasta and cook according to package instructions until al dente. Drain and set aside.
Making the Bolognese Sauce

Sauté the Aromatics
In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion is translucent, about 5 minutes.

Brown the Meat
Add the ground pork and ground beef to the skillet. Cook until browned, breaking up the meat with a spoon, about 8-10 minutes.

Incorporate the Tomatoes and Cream
Stir in the crushed tomatoes, salt, black pepper, oregano, and basil. Reduce the heat to low, cover, and let simmer for 15 minutes. Then, stir in the heavy cream and let cook for another 5 minutes.

Finish the Sauce
Fold in the ricotta cheese until well combined and creamy. Adjust seasoning to taste.

Combine Pasta and Sauce
Add the drained rigatoni to the skillet with the Bolognese sauce. Toss gently to ensure the pasta is coated evenly with the sauce.

Divide the pasta Bolognese among plates. Grate the Pecorino Romano cheese on top before serving. Enjoy!
