Burger Preparation

    Prepare the Lamb Patties

    In a mixing bowl, combine the ground lamb, salt, black pepper, and garlic powder. Mix gently until combined. Form the mixture into two equal-sized patties.

    Cook the Lamb Patties

    Preheat a grill or skillet over medium-high heat. Cook the lamb patties for about 4-5 minutes on each side or until they reach your desired doneness.

    Add Goat Cheese

    In the last minute of cooking, place 2 oz of Bermuda Triangle Goat Cheese on each patty and cover to melt.

Assemble the Burger

    Prepare the Buns

    Lightly toast the burger buns on the grill or in a toaster until golden brown.

    Spread Duck Fat Mayo

    In a small bowl, mix mayonnaise with 2 tablespoons of duck fat. Spread the duck fat mayo on the bottom half of each toasted bun.

    Add Burger and Toppings

    Place the cooked lamb patty with melted goat cheese on the mayo-covered bun. Top with 2 tablespoons of red pepper jam and a generous handful of arugula. Place the top half of the bun on to complete the burger.

Fries Preparation

    Prepare the Potatoes

    Peel the potatoes and cut them into thin strips to create fries.

    Fry the Potatoes

    Heat the duck fat in a deep fryer or heavy-bottomed pot to 350°F (175°C). Fry the potato strips in batches until they are golden brown and crispy, about 5-7 minutes. Remove and drain on paper towels.

    Season the Fries

    Sprinkle the fried potatoes with salt to taste while they are still hot.
