Prepare the Oven-Dried Tomatoes
Preheat your oven to 200°F (95°C). Slice tomatoes in half, drizzle with olive oil, sprinkle with salt, and place on a baking sheet. Bake for 4-6 hours until they are dried but still somewhat pliable.

Prepare the Broccoli
While the bacon is cooking, bring a pot of salted water to a boil. Blanch the broccoli crowns for about 2 minutes, then drain and immediately transfer to an ice bath to stop the cooking process. Pat dry.

Slice the Shallots
Thinly slice the shallots and set aside.

Make the Dressing
In a bowl, combine mayonnaise, grated Parmesan cheese, lemon juice, minced garlic, white truffle oil, salt, and black pepper. Whisk until smooth and creamy.

In a large bowl, combine the grilled broccoli, chopped crispy bacon, sliced shallots, and oven-dried tomatoes. Drizzle with the white truffle Caesar dressing and toss gently to combine.
