Calamari Preparation

    Prepare the Calamari

    Rinse the calamari rings under cold water and pat dry with paper towels.

    Marinate the Calamari

    Place the calamari rings in a bowl and cover with buttermilk. Let sit for at least 30 minutes to marinate.

    Prepare the Breading

    In a separate bowl, combine flour, cornstarch, salt, black pepper, paprika, and cayenne pepper.

    Coat the Calamari

    Remove the calamari from buttermilk, allowing excess to drip off. Dredge each ring in the flour mixture until fully coated.

Frying

    Heat the Oil

    In a large pot or deep fryer, heat vegetable oil to 375°F (190°C).

    Fry the Calamari

    Carefully add the coated calamari rings to the hot oil in batches, making sure not to overcrowd the pot. Fry for 2-3 minutes or until golden brown and crispy.

    Drain the Calamari

    Using a slotted spoon, remove the fried calamari and place them on paper towels to drain excess oil.

Spicy Aioli Preparation

    Mix the Aioli

    In a bowl, combine mayonnaise, minced garlic, sriracha sauce, lemon juice, salt, and black pepper. Stir until well mixed.

    Chill the Aioli

    Cover and refrigerate the spicy aioli for at least 15 minutes before serving.

Serving

    Plate the Dish

    Serve the crispy calamari hot with a side of spicy aioli for dipping.
