Method
Dough Preparation

Activate Yeast
In a small bowl, mix warm water, sugar, and yeast. Let it sit for about 5-10 minutes until frothy.

Mix Dough Ingredients
In a large mixing bowl, combine flour and salt. Make a well in the center, add the activated yeast mixture and olive oil. Stir until a dough forms.

Knead the Dough
Transfer the dough to a floured surface and knead for about 8-10 minutes until smooth and elastic.

Let Dough Rise
Place the dough in a greased bowl and cover with a cloth. Let it rise in a warm place for 1 hour or until doubled in size.
Cheese Filling Preparation

Mix Cheese Filling
In a bowl, combine ricotta cheese, mozzarella cheese, parmesan cheese, and Italian seasoning. Mix well and set aside.
Pesto Filling Preparation

Combine Pesto Filling
In a bowl, mix pesto sauce with mozzarella cheese until well combined.
Chicken & Sun-Dried Tomato Filling Preparation

Mix Chicken Filling
In a bowl, combine shredded chicken, chopped sun-dried tomatoes, mozzarella cheese, and basil. Mix until well combined.

House Sauce Preparation

Make House Sauce
In a small saucepan, combine tomato sauce, garlic powder, and Italian seasoning. Simmer for 10 minutes to meld the flavors.
Calzone Assembly

Roll Out Dough
Once the dough has risen, divide it into equal portions. Roll out each portion on a floured surface into a circle.

Fill Calzone
Place your desired filling on one half of the dough circle, then fold the other half over and seal the edges by crimping with a fork.

Bake Calzones
Preheat the oven to 425°F (220°C). Place the calzones on a baking sheet lined with parchment paper. Bake for 15-20 minutes or until golden brown.

Serve warm with the house sauce on the side for dipping.
