Preparing the Marinara Sauce

Add Tomatoes and Seasoning
Add the canned crushed tomatoes, dried oregano, salt, and black pepper. Stir well to combine.

Simmer the Sauce
Reduce heat to low and let the sauce simmer for about 20 minutes, stirring occasionally. Add chopped fresh basil in the last 5 minutes of cooking.

Preheat the Oven
Preheat your oven to 375°F (190°C).

Bread the Chicken
Dredge each chicken breast in the flour, shaking off excess, dip in the egg, then coat with breadcrumbs. Ensure they are well covered.

Fry the Chicken
In a large skillet, heat 1 cup of olive oil over medium-high heat. Once hot, add breaded chicken breasts and fry until golden brown, about 4-5 minutes per side.

Bake the Chicken
Transfer the fried chicken to a baking dish. Spoon marinara sauce over each piece, then top with shredded mozzarella and grated parmesan cheese. Bake in the preheated oven for 20-25 minutes until the cheese is bubbly.

Boil Water
In a large pot, bring salted water to a boil.

Cook the Capellini
Add the capellini pasta to the boiling water and cook according to package instructions, usually about 3-4 minutes. Drain and set aside.
Serving

Plate the Dish
On each plate, serve a portion of capellini pasta topped with marinara sauce. Place a piece of chicken parmigiana on top and garnish with additional chopped basil if desired.
