Method
Pasta Preparation
- 1
Cook the Capellini
In a large pot, bring 4 quarts of water to a boil. Add 1 tablespoon of salt.
- 2
Add Pasta
Once the water is boiling, add the capellini pasta and cook according to the package instructions until al dente, usually about 3-4 minutes.
- 3
Drain and Set Aside
Drain the pasta in a colander and set aside, reserving a cup of pasta water if needed for the sauce.
Meatball Preparation
- 4
Preheat Oven
Preheat your oven to 400°F (200°C).
- 5
Mix Ingredients
In a large bowl, combine the ground beef, breadcrumbs, grated Parmesan cheese, egg, minced garlic, chopped parsley, salt, and black pepper. Mix well until fully combined.
- 6
Form Meatballs
Shape the mixture into meatballs, about 1-2 inches in diameter, and place them on a baking sheet lined with parchment paper.
- 7
Bake Meatballs
Drizzle olive oil over the meatballs and bake in the preheated oven for 20-25 minutes, or until cooked through and browned.
House Red Sauce Preparation
- 8
Sauté Onions and Garlic
In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes until translucent. Add the minced garlic and cook for an additional minute.
- 9
Add Tomatoes and Seasonings
Stir in the crushed tomatoes, oregano, salt, black pepper, and sugar. Bring the sauce to a simmer.
- 10
Cook the Sauce
Let the sauce simmer for about 15-20 minutes, stirring occasionally. Add fresh basil just before serving.
Assembly
- 11
Combine Pasta and Sauce
In the skillet with the red sauce, add the drained capellini pasta and toss to coat well. If the sauce is too thick, add reserved pasta water a little at a time.
- 12
Serve with Meatballs
Plate the pasta and top with baked meatballs. Garnish with extra Parmesan cheese and parsley if desired.
