Rinse Olives
Rinse the Sicilian green and black olives under cold water to remove excess brine. Drain well.

Combine Olives
In a large mixing bowl, combine the rinsed green and black olives, making sure they are evenly mixed.

Prepare Marinade
In a small saucepan, combine the extra virgin olive oil, smashed garlic cloves, chopped rosemary, thyme leaves, red pepper flakes, lemon zest, salt, and black pepper. Heat the mixture over low heat for about 5 minutes, allowing the flavors to infuse.

Combine Olives with Marinade
Once the marinade is warmed and fragrant, pour it over the olives in the mixing bowl. Toss gently to ensure all olives are coated with the marinade.

Warm the Olives
Transfer the marinated olives to a serving dish and place in a warm oven (around 200°F or 93°C) for 10-15 minutes to serve them warm.
