Prepare the Dates
Preheat your oven to 400°F (200°C). While the oven is heating, take the Medjool dates and make a small slit lengthwise on one side of each date. Carefully remove the pit from each date, if not already pitted.

Stuff with Cheese
Take the smoked bleu cheese and divide it into 12 equal portions. Using your fingers or a small spoon, stuff each date with a portion of the cheese, pressing gently to fill the cavity.

Wrap in Bacon
Take one slice of bacon and wrap it around each stuffed date, ensuring the cheese is securely enclosed. You can cut the bacon in half if it is too long. Secure the bacon with a toothpick if necessary.

Bake the Dates
Place the bacon-wrapped dates on a baking sheet lined with parchment paper. Ensure they are spaced out to allow even cooking. Bake in the preheated oven for 15-20 minutes, or until the bacon is crispy and golden brown.

Drizzle with Honey (Optional)
If using honey, remove the dates from the oven and drizzle some honey over the top for added sweetness. Sprinkle with freshly cracked black pepper to enhance the flavor.
