Method

Cooking the Beans

    Prepare the Beans

    Rinse the Romano beans under cold water to remove any dirt. Trim the ends of the beans if necessary.

    Cook the Beans

    In a large pot, combine the rinsed Romano beans, water, and 1 tsp of salt. Bring to a boil over medium-high heat, then reduce to a simmer. Cover and cook for about 20-25 minutes or until the beans are tender but still firm.

    Drain and Set Aside

    Once cooked, drain the beans and set them aside while you prepare the persillade and sauce almondine.

Preparing the Persillade

    Combine Ingredients

    In a mixing bowl, combine the chopped parsley, minced garlic, olive oil, salt, and black pepper. Mix well until all ingredients are evenly coated.

    Set Aside

    Set the persillade aside to allow the flavors to meld while you prepare the sauce almondine.

Making the Sauce Almondine

    Toast the Almonds

    In a skillet over medium heat, toast the sliced almonds for about 3-5 minutes until they are golden brown, stirring frequently to prevent burning.

    Prepare the Sauce

    Reduce the heat to low, add the butter to the skillet with the toasted almonds, and allow it to melt. Once melted, add the lemon juice and 1 tsp of salt. Stir to combine.

    Combine with Beans

    Add the cooked Romano beans to the skillet with the sauce almondine. Toss gently to coat the beans with the sauce.

Serving

    Plate the Dish

    Transfer the Romano beans coated with the sauce almondine to a serving platter. Spoon the prepared persillade over the top of the beans.
