Preparing the Beets

Roast the Beets
Preheat the oven to 400°F (200°C). Wash the beets thoroughly and wrap each one in aluminum foil. Place them on a baking sheet and roast in the oven for about 45-60 minutes, or until they are tender when pierced with a fork. Remove from the oven and let them cool.

Peel the Beets
Once the beets are cool enough to handle, unwrap them and use your hands or a paper towel to rub off the skins. Cut the beets into wedges or slices.
Assembling the Salad

Prepare the Salad Base
In a large salad bowl, add the mixed greens as the base.

Add Beets and Toppings
Layer the roasted beet slices over the mixed greens. Crumble the goat cheese on top and sprinkle the walnuts evenly over the salad.
Making the Dressing

In a small bowl, whisk together the olive oil, balsamic vinegar, honey, salt, and black pepper until well combined.
