Crispy Waffle Potatoes

    Prepare the Potatoes

    Wash and peel the Russet potatoes. Using a mandoline slicer, slice the potatoes into thin, waffle-shaped slices, about 1/8 inch thick.

    Rinse and Soak

    Rinse the sliced potatoes under cold water to remove excess starch. Soak them in a bowl of cold water for at least 30 minutes to help them crisp up when cooked.

    Heat the Oil

    In a large, deep pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Potatoes

    Remove the potatoes from the water and pat them dry with paper towels. Fry them in batches in the hot oil until golden brown and crispy, about 3-4 minutes per batch.

    Season and Drain

    Using a slotted spoon, transfer the fried potatoes to a paper towel-lined plate to drain. Season immediately with salt and pepper to taste.

    Combine Ingredients

    In a medium bowl, whisk together the heavy cream and buttermilk until well combined.

    Let it Sit

    Cover the bowl with a clean cloth and let it sit at room temperature for 12-24 hours until thickened. Once thickened, refrigerate until ready to use.

Assembly

    Prepare the Garnish

    Chop the chives finely and set aside.

    Serve

    On a serving platter, arrange the crispy waffle potatoes. Top each potato slice with a dollop of crème fraîche, a sprinkle of chopped chives, and a small spoonful of Siberian caviar.
