Pork Chop

Prepare the Pork Chops
Season the pork chops with salt, black pepper, and garlic powder on both sides.

Cook the Pork Chops
Heat olive oil in a large skillet over medium-high heat. Add the pork chops and cook for about 5-7 minutes on each side until they are browned and cooked through. Remove from heat and let rest.
Polenta Cake

Cook the Polenta
In a saucepan, bring 4 cups of water to a boil. Gradually whisk in the polenta, stirring constantly to prevent lumps. Reduce heat to low and simmer for about 20-25 minutes until thickened.

Add Ingredients to Polenta
Stir in the butter, Parmesan cheese, and salt until well combined. Pour the polenta into a greased cake pan and let it cool and set for about 10-15 minutes.

Slice the Polenta Cake
Once set, cut the polenta into slices or squares.

Prepare the Tomatoes
Wash the cherry tomatoes and place them in a bowl. Drizzle with olive oil and sprinkle with salt and torn fresh basil.

Roast the Tomatoes
Spread the tomatoes on a baking sheet and roast in a preheated oven at 400°F (200°C) for about 15-20 minutes, or until they are blistered and juicy.
Serving

Plate the Dish
On a serving plate, arrange a slice of polenta cake, top it with a grilled portobello mushroom, and garnish with roasted cherry tomatoes. Drizzle with aged balsamic vinegar before serving.
