Soup Preparation

    Sauté the Onions

    In a large pot, melt the butter over medium heat. Add the sliced yellow onions and stir to coat them in the butter. Cook for about 30-40 minutes, stirring occasionally, until the onions are caramelized and golden brown.

    Add Garlic

    Once the onions are caramelized, add the minced garlic and sauté for an additional 2 minutes until fragrant.

    Deglaze with Wine

    Pour in the dry white wine to deglaze the pot, scraping up any browned bits from the bottom. Let it simmer for about 5 minutes until reduced by half.

    Add Broth and Seasonings

    Add the beef broth, fresh thyme leaves, bay leaf, salt, and black pepper. Bring the mixture to a boil, then reduce the heat and let it simmer uncovered for 30 minutes.

Serving Preparation

    Prepare the Baguette

    While the soup is simmering, preheat your oven to 350°F (175°C). Place sliced baguette on a baking sheet and toast in the oven for about 10 minutes until crispy.

    Assemble the Soup

    Remove the bay leaf from the soup. Ladle the soup into oven-safe bowls, and place a slice of toasted baguette on top of each bowl.

    Add Cheese

    Generously sprinkle the grated Gruyère and Parmesan cheese over the baguette slices in each bowl.

    Broil the Soup

    Place the bowls under the broiler for 3-5 minutes, or until the cheese is bubbly and golden brown. Keep an eye on it to prevent burning.
