Prepare Freekeh
Rinse 1 cup of freekeh under cold water in a fine mesh strainer. Drain and set aside.

Wash 2 cups of spinach thoroughly and roughly chop.

Toast Freekeh
Add the rinsed freekeh to the pot and stir for about 2-3 minutes to lightly toast it with the vegetables.

Pour in 2 cups of vegetable broth and add 1 tsp of cumin, 1 tsp of cinnamon, 1 tsp of salt, and 1 tsp of black pepper. Stir well to combine.

Bring the mixture to a boil, then reduce the heat to low, cover the pot, and let it simmer for about 20-25 minutes until the freekeh is tender and the liquid is absorbed.
