Chocolate Mousse

Melt Chocolate and Butter
In a heatproof bowl, combine the dark chocolate and unsalted butter. Place over a pot of simmering water, stirring occasionally until melted and smooth. Remove from heat and let cool slightly.

Prepare the Egg Mixture
In a separate bowl, whisk the eggs and granulated sugar together until thick and pale. This should take about 5 minutes.

Whip the Cream
In a large bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the chocolate mixture in three additions, being careful not to deflate the mixture.

Chill the Mousse
Spoon the mousse into serving dishes or a large bowl. Cover with plastic wrap and refrigerate for at least 2 hours or until set.
Whipped Cream Topping

Prepare the Whipped Cream
In a clean mixing bowl, add the heavy whipping cream, powdered sugar, and vanilla extract. Using an electric mixer, whip on medium-high speed until soft peaks form.

Serve
Once the mousse is set, remove from the refrigerator. Top each mousse serving with a dollop of whipped cream before serving.
