Method

Preparation of the Chocolate Lava Cake

1

Preheat the Oven

Preheat your oven to 220°C (425°F). Grease four ramekins with butter and dust them with flour to prevent sticking.

2

Melt Chocolate and Butter

In a microwave-safe bowl, combine the semisweet chocolate and unsalted butter. Microwave in 30-second intervals, stirring between each, until fully melted and smooth.

3

Whisk Eggs and Sugar

In a separate bowl, whisk together the large eggs, egg yolks, and granulated sugar until the mixture is light and frothy.

4

Combine Mixtures

Pour the melted chocolate mixture into the egg mixture, add the vanilla extract and a pinch of salt, and stir until well combined.

5

Add Flour

Sift the all-purpose flour over the chocolate mixture, and gently fold it in until just combined. Be careful not to overmix.

6

Pour Batter into Ramekins

Divide the batter evenly among the prepared ramekins, filling them about 3/4 full.

7

Bake the Cakes

Place the ramekins on a baking tray and bake in the preheated oven for 12-14 minutes, or until the edges are set but the center is still soft.

8

Cool and Serve

Remove from the oven and allow to cool for 1 minute. Carefully invert each ramekin onto individual plates. Serve immediately with a scoop of vanilla ice cream, drizzled with chocolate sauce, and fresh berries on the side.
