Preparation of Fish

    Season the Redfish

    Pat the redfish fillets dry with paper towels. Rub each fillet with olive oil and generously coat with the blackening spice blend, ensuring both sides are well covered.

    Heat a large cast-iron skillet over medium-high heat until very hot, about 5 minutes.

Cooking the Fish

    Cook the Redfish

    Place the seasoned redfish fillets in the hot skillet and cook for about 3-4 minutes on each side, or until the fish is blackened and cooked through. Remove from the skillet and set aside.

Preparation of Long Beans

    Prepare the Long Beans

    While the fish is cooking, trim the ends of the long beans and chop them into 2-inch pieces. Mince the regular garlic and chop the black garlic.

    Sauté the Beans

    In the same skillet, add the chopped long beans, minced garlic, and a pinch of salt. Sauté for about 5-7 minutes until the beans are tender and slightly charred.

    In a small bowl, combine hoisin sauce, soy sauce, and rice vinegar. Mix well and set aside.

Final Assembly

    Plate the Dish

    On a serving plate, arrange the sautéed long beans, place the blackened redfish on top, and drizzle with the hoisin sauce mixture.

    Garnish

    Finely chop the cilantro, basil, and mint. Sprinkle the herbs over the fish and beans before serving.
