    Prep the Ingredients

    Cut the beef into 2-inch cubes. Dice the bacon into small pieces. Chop the carrots, onions, and potatoes into bite-sized pieces. Slice the mushrooms and mince the garlic.

    Brown the Bacon

    In a large Dutch oven, heat 2 tablespoons of olive oil over medium heat. Add the diced bacon and cook until crispy. Remove the bacon and set aside, leaving the fat in the pot.

    Brown the Beef

    In the same pot, add the beef cubes in batches, searing on all sides until browned. Remove and set aside with the bacon.

    Sauté Vegetables

    Add the onions and garlic to the pot. Sauté until the onions are translucent. Then add the carrots, potatoes, and mushrooms, cooking for another 5 minutes.

    Combine Ingredients

    Return the beef and bacon to the pot. Pour in the red wine and beef broth. Stir in the horseradish, thyme, bay leaves, salt, and black pepper.

    Simmer the Stew

    Bring the mixture to a boil, then reduce the heat to low. Cover and let it simmer for 2 to 3 hours, stirring occasionally until the beef is tender.

Serving

    Serve the Dish

    Remove the bay leaves before serving. Ladle the beef bourguignon into bowls and serve with crusty bread or over egg noodles.
