Method

Sauce & Prep

  1. 1

    Make the Russian-style sauce

In a small bowl, combine 1/2 cup mayonnaise, 2 tablespoons ketchup, 1 teaspoon prepared horseradish, 1 teaspoon Dijon mustard, 1/2 teaspoon Worcestershire sauce, 1/2 teaspoon paprika, 1 teaspoon hot sauce (if using), 1/4 teaspoon salt, and 1/4 teaspoon black pepper. Whisk until smooth and taste; adjust seasoning or heat as desired. Chill in the refrigerator while you assemble sliders.

  2. 2

Preheat the oven to 350°F (175°C). Line a small baking dish or rimmed sheet pan slightly larger than the 12 buns so sliders fit snugly but not crowded.

Assemble Sliders

  1. 3

Slice the 12 mini brioche buns in half horizontally, keeping the tops and bottoms intact as sets.

  2. 4

Place the bottom halves of the buns in a single layer in the prepared baking dish so they touch; this helps keep sliders together during baking.

  3. 5

Spread about 1 to 1 1/2 teaspoons of the Russian-style sauce onto each bottom bun. Reserve remaining sauce for serving or additional spreading.

  4. 6

Divide the 1 lb sliced pastrami evenly among the 12 bottoms (about 1.3 ounces per slider). Fold or stack slices so each slider has a generous but not overflowing portion.

  5. 7

Cut the 6 Swiss cheese slices into halves and place one half slice over the pastrami on each slider so every slider has cheese.

  6. 8

Top each cheese-covered pastrami stack with one dill pickle chip, centered.

  7. 9

Place the top halves of the buns over each assembled slider.

Butter Topping & Bake

  1. 10

Melt 3 tablespoons unsalted butter in a small saucepan or microwave-safe bowl. Stir in 1 teaspoon minced garlic, 1 tablespoon finely chopped fresh parsley, and 1 teaspoon everything bagel seasoning (if using).

  2. 11

Brush the melted butter mixture generously over the tops of the buns, covering all 12 sliders. If desired, brush a little onto exposed edges to encourage browning.

  3. 12

Cover the baking dish loosely with aluminum foil and bake in the preheated 350°F (175°C) oven for 8 minutes to warm the pastrami and melt the cheese.

  4. 13

Remove the foil and bake uncovered for an additional 3–5 minutes until tops are golden and buttered. Watch closely to prevent burning.

  5. 14

Remove sliders from oven and let rest 2 minutes. Serve warm with remaining Russian-style sauce on the side for dipping or spreading.
