In a cocktail shaker, combine the fresh lime juice, coconut cream, white rum, pineapple juice, and simple syrup. Add a handful of fresh mint leaves for an aromatic touch.

Fill the shaker with ice cubes, secure the lid, and shake vigorously for about 15 seconds until well chilled.

Strain the mixture into chilled cocktail glasses. Garnish with lime wedges and pineapple slices, and a sprig of mint for a refreshing coastal touch.

In a small bowl, whisk together olive oil, lemon juice, minced garlic, salt, and black pepper.

Prepare the Marinade

Place the fish fillets in a shallow dish and pour the marinade over them. Let marinate in the refrigerator for 20-30 minutes.

If using a grill, preheat to medium-high heat. If using an oven, preheat to 400°F (200°C).

Using an oyster knife, carefully insert the blade into the hinge of each oyster. Twist the knife to pry open the shell and remove the top half. Be cautious of the sharp edges.

Shucking the Oysters

Place the opened oysters on a platter, ensuring they stay in their shells. Optionally, sprinkle sea salt on the platter to keep the oysters stable.

Serving

Serve the oysters with lemon wedges on the side, along with cocktail sauce and hot sauce for dipping.
