Making the Risotto

    Sauté the Aromatics

    In a medium saucepan, heat the olive oil over medium heat. Add the finely chopped onion and sauté until translucent, about 5 minutes. Add the minced garlic and sauté for another minute until fragrant.

    Cook the Rice

    Add the Arborio rice to the saucepan and stir for 2-3 minutes, allowing the rice to toast slightly. Pour in 1 cup of vegetable broth and stir until the liquid is absorbed. Continue to add the broth, one cup at a time, stirring continuously until the rice is creamy and al dente, about 18-20 minutes.

    Finish the Risotto

    Once the rice is cooked, remove it from the heat. Stir in the grated Parmesan cheese, salt, and black pepper. Spread the risotto onto a baking sheet and let it cool completely.

Preparing the Risotto Balls

    Once the risotto has cooled, use your hands to form small balls, about 1-1.5 inches in diameter. Place them on a plate.

    Prepare the Breading Station

    Set up a breading station with three shallow dishes: one with flour, one with beaten eggs, and one with breadcrumbs mixed with salt.

    Bread the Risotto Balls

    Dredge each risotto ball in flour, then dip it in the beaten eggs, and finally coat it with the breadcrumb mixture, ensuring they are evenly coated.

Frying the Risotto Balls

    Heat the Oil

    In a large, deep skillet or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Risotto Balls

    Carefully add the breaded risotto balls to the hot oil, frying in batches to avoid overcrowding. Fry for 3-4 minutes or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

    Serve the crispy risotto balls warm, optionally with marinara sauce for dipping.
