    Prepare the Sauerkraut

    In a medium saucepan, combine apple sauerkraut and Trainwreck Ale. Cook over medium heat until heated through, about 5-7 minutes. Set aside.

    Assemble the Sandwich

    On two slices of marble rye, spread 2 tablespoons of Thousand Island dressing on each slice. Layer 4 oz of corned beef on one slice, followed by 4 oz of Swiss cheese, and then top with the Trainwreck Ale braised apple sauerkraut.

    Grill the Sandwich

    Top with the second slice of rye bread. Heat a skillet over medium heat and add a little butter. Grill the sandwich for 3-4 minutes on each side or until the bread is golden brown and the cheese is melted.

    Serve

    Remove from heat, slice in half, and serve warm with extra Thousand Island dressing on the side.
