Pretzel Dough Preparation

    Activate Yeast

    In a bowl, combine warm water, granulated sugar, and yeast. Let it sit for about 5-10 minutes until frothy.

    Make Dough

    In a large mixing bowl, combine flour and salt. Add the yeast mixture and mix until a dough forms. Knead the dough on a floured surface for about 5-7 minutes until smooth.

    First Rise

    Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

    Shape Pretzel

    Preheat your oven to 450°F (232°C). After the dough has risen, punch it down and divide it into 2 equal pieces. Roll each piece into a long rope and twist it into a pretzel shape.

    Baking Soda Bath

    In a large pot, bring 10 cups of water to a boil and add baking soda. Boil each pretzel for 30 seconds, then remove and place on a baking sheet lined with parchment paper.

    Add Egg Wash

    Brush the pretzels with the egg yolk mixture and sprinkle coarse sea salt on top.

    Bake

    Bake in the preheated oven for 12-15 minutes or until golden brown. Remove and let cool slightly.

Cheese Sauce Preparation

    Make Roux

    In a saucepan, melt butter over medium heat. Stir in flour and cook for about 1 minute.

    Add Milk

    Gradually whisk in the milk and cook until thickened, about 2-3 minutes.

    Add Cheese

    Remove from heat and stir in the cheddar cheese until melted. Add garlic powder and salt to taste.
